Corn, Beans, Tomatoes, a Single Lone Beet and Tomato Confit

Today was a good gardening day so far. I spent a while picking and watering everything in the yard, and I’m headed to the community garden in a little while.
Here’s today’s harvest. A bunch of non-cherry tomatoes, even more cherry tomatoes, purple beans, green beans, a single lonely beet, one small carrot, a single small jalapeƱo (thanks to the kids — I would’ve let it grow some more), a nice pile of corn and a bunch of cucumbers.
I’m going to freeze the corn today, and hopefully can some tomatoes tomorrow.
Tomato Confit
The tomatoes turned out really good. I ended up not canning can them because I couldn’t find any safe and sane sounding recommendations for canning tomatoes in oil. Apparently it’s difficult to can things in oil hot enough to kill the botulism spores.
I’m keeping them in the fridge for a few days for the flavor to spread through the oil a bit, then we’ll use them on a pizza, or in some of Caroline’s home made noodles and alfredo sauce.
