This was pretty simple, but very very good. It’s just roasted squash, zucchini and veggies with spices, and it really lets the vegetable’s flavor come through.
- 2 small zucchini
- 2 small yellow summer squash
- 1 cup portobello mushrooms
- 1 large red bell pepper
- 1/4 cup sesame seeds
- Enough olive oil to float the sesame seeds
Chop the veggies into large bite sized pieces and place in a broiler friendly dish. Put the sesame seeds in a bowl or cup, and add oil until the seeds are just barely suspended. Brush them onto the vegetables.
Broil on low until the mushrooms have darkened and the peppers are starting to toast at the edges. Toss lightly with the olive oil that dripped to the bottom of the pan, and serve.
Salt and pepper to taste, if desired.
